Blueberry Oatmeal Muffins


Today's recipe was found on recipezaar.com and was submitted by Dancer. We really enjoyed these, they were not too sweet and they did not call for as much fat as a lot of other muffin recipes do.

Ingredients

2 egg whites or 1 whole egg, slightly beaten
1 cup plain non-fat yogurt or non-fat vanilla yogurt*
1/4 cup margarine or butter, softened*
1 1/4 cups all-purpose flour
1 cup quick-cooking oats
1/2 cup brown sugar, packed
2 teaspoons baking powder
1 teaspoon cinnamon, ground
1/2 teaspoon baking soda
1/4 teaspoon nutmeg, ground
1/4 teaspoon salt, if desired
1 cup blueberries, drained*

*We went with butter, blackberry yogurt (since we did not have the plain or vanilla on hand), and we used fresh blueberries. I do not think that these choices made for a less tasty muffin... they may have made it tastier in fact!

Directions
Heat oven to 400 degrees F.
Line 12 medium muffin cups, 2 1/2x1 1/2 inches, with paper baking cups, or grease bottoms only of muffin cups.
Mix all ingredients except blueberries just until flour is moistened (batter will be lumpy). Fold in blueberries.
Divide batter evenly among muffin cups.
Bake 20 to 25 minutes or until golden brown.
Immediately remove from pan.
Enjoy warm or cold!!!
